A Lazy Egg-and-Cheese Sandwich

Like any good New Yorker, I consider an egg-and-cheese on a roll or toast from a bodega to be a major food group. I watch in amazement as griddle guys make them—along with 12 other breakfasts, keeping the orders straight in their heads when I can barely remember what day it is—in two minutes flat. It’s a beautiful thing. But, I kept getting sandwiches where cheese was an afterthought, just layered on top of eggs that were never hot enough to melt it. I wanted the cheese up in my eggs. So, I started making them at home.
My only rule was that it had to take less time for me to make than it would for me to walk two blocks to the nearest place that makes them. I ended up taking a crepe-like approach—cooking the egg thinly and then wrapping it, almost like an egg roll, around a belly of melted cheese. It takes less than five minutes. It became a habit, and also a favorite lunch for my toddler.
Recipe: Lazy Egg-and-Cheese Sandwich
An English muffin or two slices bread of your choice
1 to 2 teaspoons butter or oil
Salt and pepper
1 slice of cheese or a tiny pile of grated or crumbled cheese
Spoonful of sliced scallions, chives, crumbled bacon, or whatever else you want in your eggs
Put the bread in a toaster. Heat a 9-inch skillet, preferably nonstick, on medium.
Beat one egg with ½ teaspoon water (or two eggs, with 1 teaspoon water), a couple pinches of salt and a few grinds of black pepper until just blended. I always use a fork for this.
Melt butter in your pan or brush it with oil, to thinly coat it. Pour in the eggs and roll them around so they cover the pan, as a thin crepe would.
Immediately plop a square of cheese (for we people with unfancy tastes in cheese) or a small pile of grated cheese (for everyone else) in the middle. Toss whatever fixings you wish on top of the cheese, though I never bother. This meal is all about immediacy for me.
A single egg will cook in 1 to 1½ minutes two eggs in 2 minutes. You’ll know its cooked when poking into it with a corner of your spatula won’t cause any loose egg to slip through to the skillet.
Fold the part of the egg closest to you over the cheese, like the first part of a business letter fold. Repeat this on the three remaining “sides,” forming a small square. You can also have fun (yes, I just said “fun”) here and fold it into a shape that matches your bread, i.e. larger for sandwich bread, long-ish for rye. Leave the folded egg-and-cheese in the center of the skillet to cook for another 30 seconds, then slide onto you muffin or toast. Top the sandwich with the other half and eat it at once.

1. Scrambled Egg Sandwich
This one's my favourite breakfast recipe of all time. The eggs are mildly seasoned and cooked for only a few second so they're soft and go really well with toast.
1 medium onion, diced small
1/2 tsp sriracha or any hot sauce
1/2 tsp oregano/fresh basil leaves
1. Heat the pan till it's hot. Now, put the butter in till it melts. Add the diced onions and let them fry till they're golden brown and crisp.
2. Add pepper, salt and mix.
3. Break the eggs and let the bottom turn crisp. Now, add the sriracha, mustard and oregano over it.
4. Turn off the gas, scramble the eggs and take them off the heat.
5. Rub some garlic over the bread, spread some butter and heat it on the pan.
6. Put the scrambled eggs over the toast and serve.
2. Egg and Mayo Sandwich
This classic combination never ceases to deliver. I prefer the combination of boiled eggs over scrambled with mayonnaise because they seem to mask the somewhat eggy taste of scrambled eggs. Then there's also the question of hard boiled vs soft boiled eggs: Clubbing soft boiled eggs with mayonnaise can make the whole thing gooey because the centre of the egg is a bit loose and the mayo tends to make it even more runnier. I'd recommend you let the eggs boil a bit longer.

4. Let it bake for about 5-6 minutes. You'll be able to see when the egg is done.
5. Pull it out and chop it into medium-sized pieces.
6. Add some ham and cheese to the mix and heat it in the microwave for a few minutes so that the cheese melts.
7. Put it on toast and dress it up with microgreens, mustard and some balsamic vinegar (optional).

This is probably one of my most favourite food combinations of all time: Light and delicious smoked salmon with eggs and avocado. It gives you the sense of a complete and well balanced meal.

Tobasco + Mustard
2 slices bread
1. Heat the pan and pour 2-3 drops of cooking oil or butter on it.
2. While the pan is heating up, whisk the eggs with milk till you can see the egg white kind of froth towards the top.
3. Pour them in the pan, add some salt and pepper on it and scramble for 2-3 minutes. Turn off the heat.
4. Toast the bread and spread some butter over it. Now stack the eggs, avocado, salmon, olives. Sprinkle some freshly ground pepper over it and done!
5. Grilled Cheese & Egg Sandwich Recipe
This one's a real treat for those who like their yolk runny and bacon fried crisp.
1 tablespoon butter
2 strips of bacon
2 slices bread
1 cheese slice
Salt & pepper
Thai sweet chilli sauce
1. Heat the pan and then add butter to it.
2. Fry the bacon strips till they're crisp. Let them rest on absorbent paper/tissues.
3. Throw out most of the oil bacon leaves, keeping just enough for the egg.
4. Turn on the gas and crack an egg open when the pan is hot.
5. Let it cook for 3-4 minutes and turn off the gas. Make sure you don't flip the egg.
6. Take a slice of bread and carefully place the egg on it. Cover this with bacon strips, salt and pepper. Take a slice of cheese and place it on the pile.
7. Now take the slice of bread and place it on the hot pan. Let it heat up, till you see the cheese slice starting to melt. Put some more butter in the pan and make sure both sides of the sandwich
8. Take it off the heat, add the basil leaves and dress them up with the thai sauce and mustard
Perfect Fried Egg Sandwich
This sandwich is perfect for breakfast or lunch! Fried eggs topped with cheese and sandwiched in between toast … sigh!
- 8 slices Bread
- 4 slices Colby Jack Cheese
- 1 Tablespoon Butter, For Frying Eggs
- 2 Tablespoons Olive Oil, For Frying Eggs
- 8 whole Eggs
- 1 pinch Lawry's Seasoned Salt, To Taste
- 1 pinch Black Pepper To Taste
Toast bread and top 4 toasted slices with cheese. Place the butter and olive oil in a large pan and heat over medium heat. When heated, crack the eggs a few at a time, working in batches season with Lawry’s Season Salt and black pepper. When the whites are opaque, flip until the yolk is cooked to your liking. Top the 4 remaining slices each with two fried eggs. Place the toast (with the cheese) on top of the egg and cut in half diagonally. Enjoy!
- 2 slices of hearty bread
- 1 to 2 slices white American cheese (or sub with havarti, cheddar or Colby)

- 2 large eggs
- all-purpose season salt, to taste

- Spray a 10-inch skillet with olive oil and preheat on medium

Grilled Cheese Sandwich with Fried Eggs
Pepper jack is probably our favorite cheese, and Colby jack is a close second. This sandwich has the best of both cheeses! Adding some avocado and salsa would be delicious too!
So however you love your egg yolks, runny or hard, just cook em&rsquo up, add your favorite type of cheese and a couple pieces of Texas style bread, and there you go, a delicious grilled cheese sandwich. Yum!
- 4 (1/2-inch-thick) challah bread slices
- 2 tablespoons butter, melted
- 1 (0.9-oz.) envelope hollandaise sauce mix
- ¼ teaspoon lemon zest
- 1 ½ teaspoons fresh lemon juice, divided
- 2 cups loosely packed arugula
- ½ cup loosely packed fresh flat-leaf parsley leaves
- ¼ cup thinly sliced red onion
- 3 teaspoons extra virgin olive oil, divided
- 4 large eggs
- ¼ teaspoon kosher salt
- ¼ teaspoon freshly ground pepper
- 12 thin pancetta slices, cooked
- 2 tablespoons chopped sun-dried tomatoes
Preheat broiler with oven rack 5 to 6 inches from heat. Brush both sides of bread with butter place on an aluminum foil-lined broiler pan. Broil 1 to 2 minutes on each side or until lightly toasted.
Prepare hollandaise sauce according to package directions stir in zest and 1/2 tsp. lemon juice. Keep warm.
Toss together arugula, next 2 ingredients, 2 tsp. olive oil, and remaining 1 tsp. lemon juice.
Heat remaining 1 tsp. olive oil in a large nonstick skillet over medium heat. Gently break eggs into hot skillet sprinkle with salt and pepper. Cook 2 to 3 minutes on each side or to desired degree of doneness.
Top bread slices with arugula mixture, pancetta slices, and fried eggs. Spoon hollandaise sauce over each egg, and sprinkle with tomatoes. Serve immediately.

We have some pretty strong opinions on what goes into the perfect breakfast sandwich: English muffins and American cheese are non-negotiable. The eggs must be folded, not scrambled or fried, so they maintain their integrity in every bite. And a sandwich without breakfast sausage isn't one worth eating. We took some cues from the breakfast sandwich gods at restaurants like Eggslut in Los Angeles, Noble Sandwich Co. in Austin, and The Eastman Egg Company in Chicago to create our version of the ultimate breakfast sandwich. Here's how we do it:
Classic English muffins deliver the optimal bread-to-egg-to-sausage ratio (we’re fiercely loyal to Thomas’ brand.) After splitting the muffin in half with your hands (that’s Thomas’ 101—a knife levels all those good nooks and crannies), the gold-star move is to butter both sides of each half, then griddle them in a large cast-iron pan over medium-high heat, pressing down slightly until golden brown, about 3 minutes per side.
We’re going to pat ourselves on the back and say that our Southern-inspired sausage patties are better than anything you can buy at the store. These easy-to-make patties should be formed no thicker than ¼". While the English muffins griddle, cook sausage alongside until browned on one side, about 2 minutes. (If some of the fat from the sausage should get onto the muffin, don’t be mad at it.)
There’s a time and a place for American cheese, and trust us: This is that time and place. Other cheeses just can’t compete with its meltability. The game plan: Once one side of the sausage has browned, flip it and place 2 slices of cheese on top. When the sausage is cooked through and the cheese is melty (about 2 minutes more), turn off the heat, but let the muffin and sausage sit there so that they stay warm while you make the eggs.
The fluffy folded egg stays put when you eat it (unlike a scramble) and doesn’t dribble onto your face (like a fried). Begin by melting a dab of butter in a small nonstick skillet over medium heat. Beat 2 large eggs until well blended and add to a small nonstick skillet season with salt and pepper. Using a heatproof rubber spatula, cook eggs, stirring pretty constantly to form pillowy curds (like a soft scramble) while lifting edges of the egg and tilting the skillet to let uncooked egg run underneath, until mostly set but still slightly runny on top, 2 minutes. Add a couple pinches of chopped chives and fold eggs into a half moon, then in half again so it all fits on that muffin.
A vinegary, not-crazy-fiery hot sauce (such as classic Cholula) is imperative for cutting through all the glorious fattiness. Also necessary: a drizzle of honey for the ultimate sticky-sweet-salty experience.
